Generally most people don't like karelas. But I am totally in love with them. I can have karelas for all 3 meals daily. Presenting my late mum's recipe here, that's one of my absolute favorite.

Ingredients
- 2 Karela
- 2 Onions (finely chopped, big)
- 1 Tomato (chopped, big)
- 1-2 tsp Salt (or as per taste)
- 1/4 tsp Red chili powder
- 1 Green Chili (chopped)
- 1/4 tsp Turmeric Powder
- Oil (for frying the karela)

Instructions
- Deskin the karelas and soak in salty water for 2 hours. Squeeze out the water.
- Deep fry and cut into pieces. In a pan, add 1 tablespoon oil.
- Heat on low flame. Add the onion and cook till soft. Add the tomatoes and cook till done. Add all dry masalas and karela pieces.
- Put on a lid and let cook till it all comes together. Serve with hot rotis.
