The vegetable curry’s flavor is further enhanced with roasted peanut powder. The dish is definitely sweet & bitter with bitterness slightly overriding.

Ingredients
 

  • 3 Sweet Potato â
  • 1/2 leaves Neem â
  • 1 pinch Hing Powder â
  • 1/3 tsp Musturd €“ 1/3 Tsp musturd â
  • 1/3 tsp Urad dhal â
  • 1 Red Chillies dry â
  • 1 gm Bengal Gram Dhal - 1 Tsp bengal dhal
  • 1 Oil â tblsp
  • 1-2 tsp Salt or as per taste
  • 1 Roasted Peanut powder â tblsp

Instructions
 

  • Clean the neem leaves and tear the stem out of it. Pressure cook the sweet potato for just 1 whistle or 5 minutes whichever is earlier. The pressure will take longer time if you put lot of water. Take out, peel & chop them into cubes.

  • Add the neem leaves and let it fry for 3 – 4 minutes until they turn slightly crispy.

  • Add the chopped sweet potato and salt. Cook well until the sweet potato is fried well.
