Tempura Fried Eggplant With Spicy Garlic Sauce

Once I saw this recipe in Home made show of Chef Ranveer brar & cooked the same recipe in Food Fiesta Delhi this year. While presented this recipe to Chef Ranveer brar & Chef Ajay chopra I was very confident about the outcome & was appreciated by both the chef's. In this dish, Egg plant is covered with very light batter called Tempura , which is deep fried, & served with the sauce which is sweet,sour & spicy . I believe the sauce which we cook af home is always better then the one we buy from the market. because its fresh , no preservatives & more over you can adjust the sharpness or sweetness of the sauce by yourself.

  • Eggplant Slices 4-5
  • maida 2-3 tablespoon
  • 1 Onion medium- sliced
  • tomato 1 Sliced
  • Garlic 2 teaspoon crushed n chopped
  • ginger chopped 1 teaspoon
  • Tomato ketchup 2 tsp
  • Vinager half teaspoon
  • Pinch of sugar
  • Salt
  • Chilli flakes half teaspoon


  • Take a bowl , add maida , pinch of salt , water n make a thin batter Slice the Eggplant n piece them with fork n put them into this batter Now deep fry them until crisp
  • Take another pan , pour some oil add Garlic + ginger and saute them. Add Onion n saute for a while Then add Tomatos , salt to taste, chilli flakes, tomato ketchup & vinegar n mix well
  • Let it cook for a while & add pinch of Sugar into it.
  • Assemble the Tempura fried eggplant on Serving tray n spread the Spicy tangy sauce on it . Serve hot !!!
