Vegan “Tuna” Jackfruit Sandwich

Ingredients
- Shredded Jack fruit 1 cup
- Onion Diced 1 Whole
- Barbecue sauce 1/2 Cup
- Cabbage Chopped 1/4 Cup
- Paprika 1 teaspoon
- Black Pepper 1 teaspoon
- Peanut Butter 1 Tablespoon
- Olive Oil 2 tablespoon
- Whole Wheat or gluten free bread
- Salt
- Black pepper powder 1tsp

Instructions
- Cut jackfruit and remove seeds. Boil and rinse jackfruit and shred the flower with help of the fork.
- In a skillet, over medium heat 1 tablespoon of olive oil, add diced onion, cook for few mintues until translucent.
- Add chopped garlic cook till it turns light brown. Do not burn the garlic pods.
- Add jackfruit and 1/4 cup barbecue sauce. Sprinkle some water and cover the lid to cook for few seconds so that the sauce mixes well with jackfruit. As jackfruit is already boiled don't overcook.
- Add paprika, salt and black pepper
- Add left over barbecue sauce and stir. Stuff it in the bread and brush with peanut butter and grill both side.
