Fried Aloo Bhindi is a very innovative and unique recipe of potato and ladies finger. It is a simple and easy but an interesting and delicious recipe. Fried aloo bhindi recipe can be prepared in less and 15-20 mins with just few basic ingredients. Here the potatoes and ladies finger are deep fried sperately and then toss it up with the spice ingredients and served as a side dish.

Ingredients
  

  • Aloo/ potato - 2 peeled and cubed
  • Bhindi - 10-15 cut into rings
  • Oil for Deep frying
  • ChillI powder - ½ tsp
  • Coriander powder - ½ tsp
  • Cumin powder - ½ tsp
  • Pepper powder - ¼ tsp
  • Green chilly - 2 chopped
  • Curry leaves - 8-10 leaves
  • Salt

Instructions
 

  • Heat oil in a pan. Add the aloo and fry on medium heat till it is cooked and slightly brown approximately 7-8 mins. Remove them in a bowl.
  • Fry the bhindis in the same oil. Add them to the fried aloo.
  • Fry the green chillies and curry leaves till crisp and switch off the heat.
  • Sprinkle masala powders, Salt to taste in the aloo bhindi and mix well.
  • Garnish with fried green chillies and curry leaves.
