Ingredients
 

  • Bhindi okra - 500 gms
  • 3 - Onion diced and chopped â
  • 2 Tomato 1 diced and 1 chopped
  • 3 Green Chillies â slit
  • Ginger juliennes – 1 tsp
  • a leaves Coriander chopped fresh
  • 1/2 tsp Turmeric Powder â
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Cumin Seeds
  • 1 tbsp Coriander Powder
  • 1 tbsp Garam Masala â
  • 1/2 tsp red chili powder â
  • 1 tbsp Lemon Juice
  • 1-2 tsp Salt or as per taste
  • to Canola Oil â deep fry
  • Canola Oil â for making sabzi

Instructions
 

  • Wash the Okra and wipe it with the paper towel.
  • Cut the okra into dices and deep fry in hot oil for 4 to 5 minutes. Drain on an absorbent paper.
  • Heat the 2 tbsp oil in a pan, add the cumin seeds and allow the seeds to crackle.
  • Now add the chopped onion, green chillies, ginger and saute it for 2-3 minutes.
  • Add chopped tomatoes, salt, red chilli powder, cumin powder, coriander powder, turmeric powder, garam masala powder and sauté well. Turn off the heat and transfer the mixture into a bowl.
  • In another pan, heat 1-1/2 tbsp oil and add the diced onions. Saute it until they turns translucent.
  • Now add the fried okra, diced tomato, onion & tomato mixture, chopped coriander leaves and lemon juice. Adjust the salt (if required). Mix well and stir in for 2 to 3 minutes.
  • Serve hot with naan, roti or paratha.
