  • Wash the Okra and wipe it with the paper towel.
  • Cut the okra into dices and deep fry in hot oil for 4 to 5 minutes. Drain on an absorbent paper.
  • Heat the 2 tbsp oil in a pan, add the cumin seeds and allow the seeds to crackle.
  • Now add the chopped onion, green chillies, ginger and saute it for 2-3 minutes.
  • Add chopped tomatoes, salt, red chilli powder, cumin powder, coriander powder, turmeric powder, garam masala powder and saute well.
  • Turn off the heat and transfer the mixture into a bowl.
  • In another pan, heat 1-1/2 tbsp oil and add the diced onions. Saute it until they turns translucent.
  • Now add the fried okra, diced tomato, onion & tomato mixture, chopped coriander leaves and lemon juice.
  • Adjust the salt (if required). Mix well and stir in for 2 to 3 minutes.
  • Serve hot with naan, roti or paratha.
