Bhindi do Pyaaza is a delicious subzi made with a double quantity of onions in okra vegetable with lots of spices.

Ingredients
- Bhindi Okra - 500 gms
- Onion – 3 1-1/2 diced and 1-1/2 chopped
- Tomatoes - 2 1 diced and 1 chopped
- Green chillies –3 slit
- Ginger juliennes – 1 tsp
- Fresh Coriander leaves - a handful chopped
- Turmeric powder – ½ tsp
- Cumin powder - ½ tsp
- Cumin seeds - ½ tsp
- Coriander Powder - 1-1/2 tbsp
- Garam Masala Powder – 1 tbsp
- Red Chilli Powder – ½ tsp
- Lemon juice - 1 tbsp
- Salt
- Canola Oil – to deep fry
- Canola Oil – for making sabzi

Instructions
- Wash the Okra and wipe it with the paper towel.
- Cut the okra into dices and deep fry in hot oil for 4 to 5 minutes. Drain on an absorbent paper.
- Heat the 2 tbsp oil in a pan, add the cumin seeds and allow the seeds to crackle.
- Now add the chopped onion, green chillies, ginger and saute it for 2-3 minutes.
- Add chopped tomatoes, salt, red chilli powder, cumin powder, coriander powder, turmeric powder, garam masala powder and sauté well. Turn off the heat and transfer the mixture into a bowl.
- In another pan, heat 1-1/2 tbsp oil and add the diced onions. Saute it until they turns translucent.
- Now add the fried okra, diced tomato, onion & tomato mixture, chopped coriander leaves and lemon juice. Adjust the salt (if required). Mix well and stir in for 2 to 3 minutes.
- Serve hot with naan, roti or paratha.
