Ingredients
- 500 gm Bhindi (okra)
- 3 Onion ( diced and chopped)
- 2 Tomato (1 diced and 1 chopped)
- 3 Green Chillies (slit)
- 1 tsp Ginger (juliennes)
- 1 tbsp Coriander leaves (fresh, chopped )
- 1/2 tsp Turmeric Powder
- 1/2 tsp Cumin Powder
- 1/2 tsp Cumin Seeds
- 1 tbsp Coriander Powder
- 1 tbsp Garam Masala
- 1/2 tsp Red chili powder
- 1 tbsp Lemon Juice
- 1-2 tsp Salt (or as per taste)
- 1-2 tbsp Canola Oil (or as required for making sabzi and to deep fry)

Instructions
- Wash the Okra and wipe it with the paper towel.
- Cut the okra into dices and deep fry in hot oil for 4 to 5 minutes. Drain on an absorbent paper.
- Heat the 2 tbsp oil in a pan, add the cumin seeds and allow the seeds to crackle.
- Now add the chopped onion, green chillies, ginger and saute it for 2-3 minutes.
- Add chopped tomatoes, salt, red chilli powder, cumin powder, coriander powder, turmeric powder, garam masala powder and saute well.
- Turn off the heat and transfer the mixture into a bowl.
- In another pan, heat 1-1/2 tbsp oil and add the diced onions. Saute it until they turns translucent.
- Now add the fried okra, diced tomato, onion & tomato mixture, chopped coriander leaves and lemon juice.
- Adjust the salt (if required). Mix well and stir in for 2 to 3 minutes.
- Serve hot with naan, roti or paratha.
