Yield / Serves
Bhindi (Okra) - 500 gms
Onion â€“ 3 (1-1/2 diced and 1-1/2 chopped)
Tomatoes - 2 (1 diced and 1 chopped)
Green chillies â€“3 slit
Ginger (juliennes) â€“ 1 tsp
Fresh Coriander leaves - a handful (chopped)
Turmeric powder â€“ Â½ tsp
Cumin powder - Â½ tsp
Cumin seeds - Â½ tsp
Coriander Powder - 1-1/2 tbsp
Garam Masala Powder â€“ 1 tbsp
Red Chilli Powder â€“ Â½ tsp
Lemon juice - 1 tbsp
Salt â€“ to taste
Canola Oil â€“ to deep fry

Wash the Okra and wipe it with the paper towel.
Cut the okra into dices and deep fry in hot oil for 4 to 5 minutes. Drain on an absorbent paper.
Heat the 2 tbsp oil in a pan, add the cumin seeds and allow the seeds to crackle.
Now add the chopped onion, green chillies, ginger and saute it for 2-3 minutes.
Add chopped tomatoes, salt, red chilli powder, cumin powder, coriander powder, turmeric powder, garam masala powder and sautÃ© well. Turn off the heat and transfer the mixture into a bowl.
In another pan, heat 1-1/2 tbsp oil and add the diced onions. Saute it until they turns translucent.
Now add the fried okra, diced tomato, onion & tomato mixture, chopped coriander leaves and lemon juice. Adjust the salt (if required). Mix well and stir in for 2 to 3 minutes.
Serve hot with naan, roti or paratha.
