Dhaniyewali Aloo Bhindi

Aloo bhindi is a nutritious and tasty vegetable which goes very well with Gujarati style dal and rice or chapati. Adding a large bunch of chopped coriander or dhaniya gives it a fresh aroma and flavour.

Ingredients
  

  • 250 gm Lady's finger or okra/bhindi, chopped into small pieces
  • 1 Potato large chopped into cubes
  • 2 Green chilies
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Red chili powder
  • Salt to taste
  • 1 tsp flour
  • 1 bunch Coriander leaves
  • 1/4 tsp Sugar
  • 1 Tomato small cut into large cubes
  • 4 tsp Oil
  • Mustard seeds

Instructions
 

  • Heat oil in a kadai and add mustard seeds. Once they splutter, add the bhindi, tomato and potato.
  • Add turmeric powder, red chilli powder and salt. Cook covered on medium flame for 10 minutes.
  • Open the lid after 10 minutes and give a good stir. Again cook for 5 more minutes.
  • Once the veggies are cooked, add the gram flour and sugar and mix well.
  • Finally add the chopped coriander and turn off the stove. Serve hot.
