Mushroom Tofu / Paneer Salad

Edible Mushrooms are good sources of selenium, an antioxidant mineral, as well as copper, niacin, potassium and phosphorous.
Additionally, mushrooms provide protein, vitamin C and iron. Because their cells walls are undigestible unless exposed to heat, you must cook mushrooms to get their nutritional benefits.
Very apt for Valentine's Day Celebration meal.

Ingredients
  

  • 12 to 14 Mushrooms
  • 100 gm Tofu or Paneer, cubed
  • 7 to 8 Mint leaves
  • 1/2 cup Carrot round slices
  • Salt to taste
  • 1/4 tsp Black pepper powder
  • 1 tbsp Lemon juice
  • 2 to 3 Spinach leaves blanched

Instructions
 

  • Blanch the mushrooms and strain to drain off water. Shallow fry the paneer / tofu pieces.
  • Now mix all ingredients and toss well. Sprinkle salt, pepper, lemon juice and serve.
