About Mushroom Tofu / Paneer Salad
Edible Mushrooms are good sources of selenium, an antioxidant mineral, as well as copper, niacin, potassium and phosphorous. Additionally, mushrooms provide protein, vitamin C and iron. Because their cells walls are undigestible unless exposed to heat, you must cook mushrooms to get their nutritional benefits.Very apt for Valentine's Day Celebration meal.

Ingredients
- 12 to 14 Mushrooms
- 100 gm Tofu (or Paneer, cubed)
- 7 to 8 Mint leaves
- 1/2 cup Carrot (round slices)
- Salt (to taste)
- 1/4 teaspoon Black pepper powder
- 1 tbsp Lemon Juice
- 2 to 3 Spinach leaves (blanched)

Instructions
- Blanch the mushrooms and strain to drain off water. Shallow fry the paneer / tofu pieces.
- Now mix all ingredients and toss well. Sprinkle salt, pepper, lemon juice and serve.
