Ingredients
- 150 ml Oil
- 100 gm Coconut sugar
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 100 gm Carrot grated
- 150 gm whole wheat flour
- 25 gm Coconut desiccated
- 1/2 tsp Cinnamon powder
- 1/4 tsp Dry ginger powder
- 2 Eggs
- 1 tsp Vanilla extract
- 100 gm Hung curd
- 2 tbsp Coconut sugar
- 1-2 tbsp Whipped cream or cream cheese

Instructions
- Preheat the oven @ 160deg for 10minutes
- In a jar mix the oil, egg and vanilla extract
- In a bowl mix the wheat flour, coconut sugar, baking pd, baking soda, cinnamon pd, dry ginger pd, carrot and coconut.
- Pour the egg mixture in the flour mixture
- Pour the batter in 8X8 greased and lined cake tin and bake at 150-160deg for about 25-30minutes Or till the toothpick comes out clean
For the Icing
- Mix hung curd, coconut sugar and rich whipped cream
- Pour in a piping bag with a star nozzle.
Recipe Notes
- You can use olive oil or vegetable oil or grapeseed oil
- Instead of wheat flour to make it more healthy you can use almond flour or oats flour
- Instead of rich whipped cream you can use cream cheeseย
- With cinnamon powder can use nutmeg powder or mixed spiced powder.
