About Bread Dinner Rolls
This is one of my easiest and most innovative recipes—absolutely delicious and crafted with just a handful of pantry staples. Each bite is irresistibly cheesy, thanks to a melty blend of cheddar and mozzarella, perfectly seasoned with chilli flakes and paprika for that extra zing.
These gorgeous dinner rolls are not only scrumptious but also incredibly versatile; you can prepare them with your favorite vegetarian or non-vegetarian fillings. For this version, I’ve used a savory chicken filling, making each roll truly delectable. Perfect for brunch, dinner, or as a satisfying snack, these fusion rolls are sure to become a new favorite!

Ingredients
- 16 slice Bread
- 1 cup Cheddar Cheese
- 1 cup Mozzarella Cheese shredded
- 1.5 tbsp Chilli Flakes
- 1.5 tbsp Paprika dry flakes
- 2 cup Chicken boneless
- 1 cup Bell Peppers
- 1 tsp Garlic mince
- 1 tsp Chilli Garlic Sauce
- 2 tbsp Coriander dhania, chopped
- 1 tsp Salt or as per taste
- 1 tsp Cumin Seed jeera
- 1 tsp Tandoori Masala optional
- 1 Eggs for an egg wash beaten
Instructions
- First of all, trim all the bread slices. Re use them as bread crumbs after drying them and grinding to a powder.
- Roll all of them a beat to smoothen them out. Do not use stale bread for this. Keep them aside and go ahead with the chicken preparation.
- Preheat oven on 180°. Heat oil in a pan and saute garlic mince first followed by onion slices until translucent.
- Add all the spices now followed by the chicken and capsicum cubes. Saute them on a medium high heat. Now lower the heat snd simmer for 15 minutes.
- Garnish with coriander and switch off the flame. Now start making rolls. Place 1 tablespoon of chicken filling on each and top with mozzarella and cheddar both as desired.
- Bring all the sides of the bread to the centre and pinch it a beat to seal it well with the use of little water. Do not soak the bread slices in water. Use it as needed while shaping these into rolls.
- Arrange all of them on a parchment lined baking tray and bake for 22-25 minutes at first. Give them all an egg wash. After done, remove the tray and spread both the cheese generously on top. Sprinkle red chilli flakes and dry parsley.
- Now bake again for 8-10 minutes or until the cheese melts.Yummy bread dinner rolls are done in just a matter of few minutes. Best enjoyed on their own or can be served with any of your favourite soup.
Recipe Notes
Additional Tips
- For an extra flavor boost, brush the tops of the rolls with a mixture of melted butter, minced garlic, and chopped parsley before baking; this adds a glossy finish and a fragrant, savory aroma.
- If you prefer a vegetarian version, try replacing the chicken with a spiced paneer and sautéed mushroom mixture, ensuring you squeeze out any excess moisture to keep the rolls from becoming soggy.
- To achieve a perfectly gooey cheese center, layer the mozzarella and cheddar in between the filling and the bread, rather than mixing them directly into the chicken mixture—this creates a delightful cheese pull with every bite.
- Leftover rolls can be wrapped in foil and reheated in an oven or air fryer at 180°C (350°F) for 5-7 minutes to restore their crispness and melty cheese texture.
