Fried Chinese bread stick also known as Chinese cruller,(YOUTIAO /CAKIO). etc. is a salted long strip fried till golden brown. Youtiao is extremely versatile, eaten at morning breakfast accompanied with coffee and rice porridge or used to dip in any sauce or soups.
Yield / Serves
All purpose flour 100 gms
Baking powder 5 gms
Salt 1/4 teaspoon
Oil 1/4 tablespoon
Water 60 ml
Oil for frying
Mix all the dry ingredients well. Add oil and water and knead well for 5minutes till shiny and smooth. Cover the dough and rest it for 2hours.
Sprinkle flour on a dusting board and roll out into thin flat dough about 3 to 4mm.
Cut the dough into 1inch wide and 6 inch long strip.
Dip a wooden or metal skewer in water and dab in the center of the dough strip.
Place another strip on top of the dabbed strip.
Press the skewer on the top of the second strip. This will help the strip stick together and remain fused during frying.
Heat oil in a wok and fry bread stick constantly flipping till it puffs evenly.
Fry one at a time and serve hot with soup or rice porridge.
