Banana rasayana is very simple to make and a famous summer cooler in South India. It is made using banana, jaggery and coconut milk. This is as a healthy summer fruit snack and is often accompanied with neer dosa, poori, dosa in Karnataka. Ingredients
  

  • 3 banana robusta
  • 2 tablespoon jaggery powder
  • ¼ teaspoon cardamom powder
  • ½ cup coconut milk thick, homemade

Instructions
 

  • Chop the banana into considerably thin round slices.
  • Add jaggery powder and cardamom powder.
  • Gently mix and pour the fresh coconut milk.
  • Allow it to steep for 5 – 10 minutes.
  • Serve immediately .

Notes

  • The jaggery should be finely powdered.
  • Since this recipe has fresh coconut milk, consume it as early as possible.
