Spicy Potato Roast is a Chettinad recipe in which potatoes are cooked with spices and roasted till crispy. A perfect side dish for lunch.

Ingredients
  

  • Potato - 4
  • Turmeric Powder - 1/4 tsp
  • Red Chilli powder - 1 tsp
  • Coriander Powder - 1 tsp
  • Oil - 2 tbsp
  • Salt
  • Curry Leaves - few

Instructions
 

  • Cut potatoes into 2 and pressure cook for 1 whistle Or In boiling water, add potatoes and cook for 5 – 7 mins.
  • Peel off the skin and cut into small cubes.
  • Add Oil in a pan.
  • Add the cooked potatoes and curry leaves to oil and mix well. Potatoes should be covered with oil. Roast till potatoes turn golden.
  • Now add the spice powders and salt. Mix well.
  • Roast in medium heat for 5 - 7 mins. Roasting potatoes requires patience. But the result will be great.
  • Switch off the heat. Transfer to serving bowl.

Notes

Do not over cook the potatoes in the 1st step.
