Spicy Potato Roast is a Chettinad recipe in which potatoes are cooked with spices and roasted till crispy. A perfect side dish for lunch.
Yield / Serves
Potato - 4
Turmeric Powder - 1/4 tsp
Red Chilli powder - 1 tsp
Coriander Powder - 1 tsp
Oil - 2 tbsp
Salt as required
Curry Leaves - few
Cut potatoes into 2 and pressure cook for 1 whistle Or In boiling water, add potatoes and cook for 5 â€“ 7 mins.
Peel off the skin and cut into small cubes.
Add Oil in a pan.
Add the cooked potatoes and curry leaves to oil and mix well. Potatoes should be covered with oil. Roast till potatoes turn golden.
Now add the spice powders and salt. Mix well.
Roast in medium heat for 5 - 7 mins. Roasting potatoes requires patience. But the result will be great.
Switch off the heat. Transfer to serving bowl.
Do not over cook the potatoes in the 1st step.
