  • Cut off the sides of the bread and slice into two halves.
  • Mash the banana in a wide bowl. Add coconut milk, wheat flour, ginger, peppercorn powder and 1 tbsp honey. Mix well.
  • Heat a non-stick frying pan. Drizzle a little bit of oil
  • Dip each half slice into the batter and place on the frying pan. Cook on a low flame till light brown or till a few dark brown spots develop.
  • Remove from the pan. Drizzle with some more honey and banana slices. Serve hot !!

Additional Tips

  • For extra crunch, dip the bread in a mixture of crushed cornflakes or rice flakes after soaking in the coconut-banana batter, then pan-fry as usual.
  • If you prefer a deeper spicy note, steep freshly cracked peppercorns and thin slices of ginger in the coconut milk for 10 minutes before blending with banana, then strain before dipping the bread.
  • To make this dish completely vegan, use agave syrup or maple syrup as a substitute for honey during garnishing.
  • Serve with a sprinkle of toasted coconut flakes and a few pomegranate seeds for added texture, color, and a festive presentation.
