This chutney well goes with dosa, uttapa, wada,chapati,even if with steamed rice... It is a flavorful chutney from Andhra.

Ingredients
  

  • 1 small size chopped onion
  • 4 chopped ripe tomatoes
  • 4 chopped green chilies
  • 10 curry leaves
  • 2 big garlic cloves
  • 1 inch ginger
  • 1/4 cup grated coconut
  • 1 whole red chili
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • a pinch hing
  • 1 tbsp oil
  • 1/2 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves optional
  • tamrind pieces according to taste
  • Salt

Instructions
 

  • 1.Heat oil in a kadai.
  • 2.Add mustard seeds,cumin seeds and hing.
  • 3.Add curry leaves,whole red chili,green chilies,garlic,ginger and tamarind.
  • 4.Now add onion,stir till onion becomes pinkish color.
  • 5.Add tomatoes stir for 3-4 min.
  • 6.Add coconut,mint leaves.
  • 7.Cook till all water from tomatoes dries up.
  • 8.Now add salt.
  • 9.Make it cool down.
  • 10.Grind it to a course paste.
  • 11.Your tomato-mint chutney is ready,garnish with mint leaves

Notes

  • If you want to store for some more days skip coconut and don’t add water at all.
