Mutter kebabs filled with dry fruits cooked in pure ghee!

Ingredients
  

For Kebab Mixture

  • 11/2 cup green peas blanched and blend
  • 1 cup chana dal boiled and mashed
  • 1 tbsp oil
  • 1 teaspoon cumin seed
  • 1 teaspoon chilly powder
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon garam masala
  • 1 tbsp bread crumbs
  • 1 tbsp coriander chopped
  • Salt according to taste

For Filling

  • 2 tbsp raisins
  • 2 tbsp cashew nuts
  • 2 tbsp green pistachio
  • 1 tbsp green chilies chopped
  • 1 tbsp green coriander chopped
  • 1 tbsp ginger julienned
  • 2 tbsp pure ghee for shallow frying

Instructions
 

  • First of all blanch and blend peas to paste. Boil chana dal and mash it to a coarsely grind paste and keep aside
  • In a pan, take 1 tablespoon cooking oil, add cumin seed and boiled chana dal. Cook it for 4 to 5 min, let it be bit dry now then add green peas paste to this and cook it for 4 to 5 minutes
  • Now add salt and all other spices and cook for 2 minute and transfer this in a bowl
  • In a mixture add chopped coriander leaves and bread crumbs mix it well and form a smooth dough
  • In another bowl add all the ingredients for filling (raisins, cashew-nuts, pistachio, green chilies, coriander, ginger)
  • Now take a portion of peas mixture on your palms flat it, fill it with the filling mixture and roll it into patties. Repeat this step with rest of mixture and form 10 -12 patties
  • In a pan add oil and shallow fry patties till golden brown.
  • Mutter dry fruit kabab is ready serve it hot with mint chutney and onion rings

Notes

  • If looking for healthy option you can use normal cooking oil but if you want to give it a royal classy taste cook it with pure ghee.
