An Indian omelette or masala omlette is a version of the omelette found in Indian cuisine. The omelette mainly includes eggs, onions, tomatoes, coriander, salt and lots of spices. Egg mixture is whisked until fluffy and then cooked on skillet or nonstick pan. This is traditional recipe which we sometimes cook for breakfast or lunch or dinner. It goes well with breads, rotis, dal rice or even can be eaten as it is. Require less oil, healthy and rich source of protein. If you are diet conscious exclude the egg yolk and prepare this dish using only egg whites.

Ingredients
- Eggs - 2
- Onion Medium– 1/2 finely chopped
- Tomato – 1/2 medium Finely chopped (without seeds and pulp)
- Finely chopped Coriander leaves – 1 tbsp.
- Turmeric powder - 1/2 tsp
- Garam masala – ½ tsp
- freshly ground black pepper – ½ tsp
- Red chilli powder – ¼ tsp
- Salt
- Oil – ½ tbsp

Instructions
- In a deep bowl take eggs, finely chopped onion, tomato, coriander leaves, salt, garam masala, red chilli powder, freshly ground black pepper and turmeric. Whisk well until frothy.
- In a nonstick pan heat oil. Pour prepared egg mixture. Spread it evenly.
- Cook on low medium heat till omelette is firm and releases its sides.
- Flip it and cook from other side for 1 minute.
- Serve hot with brown bread or chapati or dal rice.
Notes
Medium hot green chilli can be added instead of red chilli powder.
Always cook an omelette on low or medium flame for even cooking.
veggies of your choice can be added.
