Ingredients
- 2 medium potatoes
- 4 egg
- 1 capsicum chopped in cubes
- 1/4 cup green onion heads and greens for garnishing
- Few Coriander leaves finely chopped
- Milk 2 tsp few drops only
- Salt
- Olive oil or regular oil
- Red chilli powder 1/4 teaspoon

Instructions
- Peel potatoes. Cut potatoes Add salt (to taste) to potatoes and fry them in oil until they are lightly crunchy. Keep it in a plate.
- In a same pan take few drops of oil, add onion heads and capsicum saute for a minute then add salt kitchen king masala redchilli powder , onion greens and coariander leaves. Mix it well . Off the flame.
- Beat the eggs with a pinch of salt (as we already added salt in potatoes n veggies ) , fried potatoes , veggies and milk. Lightly coat frying pan with olive oil.
- Add the mixture and cook over low heat, flipping omelette once to cook other side. Your omellete is ready. Garnish it with onion greens and Serve hot.
Notes
Note:- In Spanish omelette you can add veggies of your choice like cherry tomatoes, parsley or broccali.
Kitchen king masala and red chilli powder is optiinal. I added this to give it some indian flavour.
