Mutton Yaknee Pulao With Shami Kabab

Mutton yaknee pulao is one of the most favorite dish in my house everyone love this combo of mutton yaknee pulao with shami kabab.
My mother makes this dish on every Sunday because its holiday and for all the family members Sunday is resemble to pulao we all just love the taste, so here I am sharing my mom recipe hope u all like it.

Ingredients
  

  • 500 gm Mutton
  • 6 cup Rice

For yaknee

  • 1 Garlic
  • 2 Bay leaf
  • 3 Cinnamon sticks
  • 1 Onion sliced
  • 4 Green chilies
  • 2 teaspoon Coriander seeds
  • 2 teaspoon Fennel seeds
  • 1 piece Cloth

For pulao

  • 2 Onion sliced
  • 5 tbsp Oil or ghee
  • 2 teaspoon cumin seed
  • 4 White cardamom
  • 10 Black pepper
  • 5 Cloves
  • 2 tbsp Ginger garlic paste
  • 5 Green chilies chopped
  • 2 teaspoon Garam masala powder
  • Salt according to your taste

For kabab

  • 250 gm Mutton minced
  • 200 gm Chana dal
  • 2 teaspoon Garam masala powder
  • 3 Bay leaf
  • 2 Cinnamon stick
  • 1 teaspoon Red chili powder
  • 2 Onion chopped
  • 3 Green chilies chopped
  • Few Coriander leaves chopped
  • Ghee for shallow frying
  • Salt according to your taste

Instructions
 

  • In a pressure cooker add mutton, garlic, green chilies, bay leaf, cinnamon sticks and water
  • Take a small piece of cloth put coriander seeds and funnel seeds in it and tie a not now add this in a pressure cooker
  • Now pressure cooked the meat till its become soft and tender
  • Wash and soaked rice
  • In a heavy bottom pot add oil
  • Now add sliced onion when its become golden brown add cumin seeds and whole dry spices
  • Stir continuously when spices got cracked add ginger garlic paste nd saute
  • Now from the pressure cooker transfer the mutton in it and saute
  • Now add green chillies in it and saute well
  • When its all saute well add yaknee stok in it ( except ginger or potli of coriander seeds and fennel seeds)
  • When its come to boil add rice in it and cover the lid so that rice can cooked in steam
  • When rice cooked well and there was no water in it off theflame and keep a side
  • In a pressure cooker add all dry spices along with chana dal and pressure cooked till its becom soft and tender
  • Now grind it well the mixture of mince and chana dal
  • Now add onion and green chili along with coriander and mix it well add salt
  • Now make a small samll portion and spread on your palm and give a shape of round kabab
  • Heat ghee on tawa and shallow fry the kabab in golen brown color serve hot with pulao
