Ingredients
  

  • 4 -5 Medium size boiled potatoes
  • 3 Medium size chopped tomatoes
  • 1 Teaspoon ginger julienne
  • 1 Teaspoon mustard seeds
  • Few curry leaves
  • 2 -3 green chillies
  • Pinch of hing asafoetida
  • 1/2 Teaspoon haldi powder turmeric powder
  • 1 Teaspoon coriander powder
  • Chilly powder according to taste
  • Salt
  • 1 tbsp fresh coriander leaves
  • 2 tbsp cooking oil

Instructions
 

  • Boil potatoes, remove the skin and keep aside Take a pan, add oil, once it is heated up add mustard seeds and hing to this
  • Now add ginger to this and sauté for a minute, add curry leaves and green chillies
  • Now add chopped tomatoes cook for a minute or two, now add salt, chilly powder, haldi, coriander powder and cook for 4 to 5 minutes or till the tomatoes are cooked properly
  • Now add boiled potatoes to this, simply crush potatoes with your hand and add
  • Cook for this mixture for 4 to 5 minutes, then add 11/2 cup of water to this and cook for another 7 to 8 minutes
  • Serve this hot with puri or chapati ....

Notes

As this one is without onion and garlic you can make during fast time also by replacing salt with rock salt
