As the Basis theme is on . This one is a basic recipe which I think when ever we start learning cooking specially curries this one is the very first recipe which every one tries

4 -5 Medium size boiled potatoes
3 Medium size chopped tomatoes
1 Teaspoon ginger julienne
1 Teaspoon mustard seeds
Few curry leaves
2 -3 green chillies
Pinch of hing asafoetida
1/2 Teaspoon haldi powder (turmeric powder)
1 Teaspoon coriander powder
Chilly powder according to taste
Salt according to taste
1 Tablespoon fresh coriander leaves
2 Tablespoon cooking oil
Boil potatoes, remove the skin and keep aside Take a pan, add oil, once it is heated up add mustard seeds and hing to this
Now add ginger to this and sautÃ© for a minute, add curry leaves and green chillies
Now add chopped tomatoes cook for a minute or two, now add salt, chilly powder, haldi, coriander powder and cook for 4 to 5 minutes or till the tomatoes are cooked properly
Now add boiled potatoes to this, simply crush potatoes with your hand and add
Cook for this mixture for 4 to 5 minutes, then add 11/2 cup of water to this and cook for another 7 to 8 minutes
Serve this hot with puri or chapati ....
As this one is without onion and garlic you can make during fast time also by replacing salt with rock salt
