Cabbage Sabji Gujarati Style

Cabbage is not a very favoured vegetable in many households. This sweet and spicy cabbage sabji makes you fall in love with this oft neglected veggie again.

Ingredients
  

  • Cabbage - 1 small
  • Potato - 1 large
  • Green chillies - 3
  • Curry leaves - a sprig
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Red chilli powder - 1 tsp
  • Coriander powder - 2 tsp
  • Salt
  • Oil - 5 tsp
  • Sugar - 1 tsp

Instructions
 

  • Wash and cut the cabbage into thin long strips. Cut the potato into small cubes. Slit the green chillies in half. Keep aside.
  • Heat oil in a kadai. Add mustard seeds and cumin seeds and let them splutter.
  • Now add the curry leaves. After they fry off, add the cabbage, potato and green chillies.
  • Now add turmeric, red chilli powder and salt. Add 1 glass of water and let it cook covered on high flame for 5 minutes.
  • After 5 minutes, again add a glass of water and let cook on medium flame for 10 minutes.
  • Now add coriander powder and let cook for 10 minutes.
  • Finally add sugar and keep the flame on high for 2 minutes. Garnish with coriander and serve with hot rotis.

Notes

Keep the cabbage a little moist during the entire process of cooking. Dont let it dry. The taste is better.
You can mix the sabji with hot rice and serve as a pulao.
