Eggless Whole Wheat Banana Muffins with Choco Chips, a guilt free recipe that you can have at any time of the day. We often are left with overripe bananas at home and no one like to eat these bananas. At the end of the day we have to throw these bananas. Don't throw your overripe bananas anymore. You can use these bananas to make your healthy chocolate chip banana muffins. These are extremely delicious, moist and full of flavor. Whole wheat, Olive oil and Bananas, I don’t think one need to mention the benefits of all these three. That is why I called this recipe a healthy recipe. The best part about this recipe is you can make these in jiffy and chances of failure are almost negligible. Bake these banana muffins when you need to quickly serve your guest. The baking aroma of these muffins will excite your guests. This lip smacking recipe will help you earn extra brownie points from your guests.

Ingredients
  

  • Whole Wheat Flour 1 cup
  • Overripe bananas Large 2
  • Organic brown Sugar 1/3 cup
  • Cinnamon ½ tsp
  • Baking Powder ½ tsp
  • Baking Soda ½ tsp
  • Olive Oil 1/3 cup
  • Milk ¼ cup
  • Nutmeg powder ¼ tsp
  • Salt ¼ tsp
  • Choco Chips Optional For garnish

Instructions
 

  • In a bowl, mash bananas with masher or fork and make banana puree. Prefer to use overripe Bananas to enhance the taste.
  • Add oil and sugar. Mix it well until sugar dissolves. I have used organic brown sugar for this recipe. It is healthier than refined white sugar and will give a nice colour to the muffins.

  • Add vanilla essence, cinnamon powder and nutmeg powder. Mix it. Adding spices like cinnamon and nutmeg is completely optional. I love cinnamon not only because of its flavour but also for its health benefits. If you want, you can skip these.

  • In a separate bowl, take whole wheat flour, baking powder, baking soda and salt. Sieve all these dry ingredients together. Whenever you are baking cakes and muffins, it is important to sift all the dry ingredients. Sifting will break the lumps.

  • Now gently fold all the dry ingredients into wet ingredients and make a smooth batter. Make sure there should are no lumps in the batter.

  • Add milk to the batter and make the batter of pouring consistency. Meanwhile, preheat the oven at 180 degree C. Take a muffin tray and arrange muffin liners into it.
  • Fill each cavity up to ¾. Sprinkle Choco chips and bake these at 180 degree Celsius for 20 minutes. Once done, take out the muffin tray from oven. Place all the muffins on a wired rack.

Notes

You can substitute Organic brown sugar with honey as well. Instead of 1/3 cup sugar, use 1/3 cup honey.
I have used olive oil but you can use any regular oil or canola oil.
If you want to use eggs for this recipe, use 2 eggs for this recipe and skip adding milk.
