Whole-Wheat And Finger Millet Triple Chocolate Muffins

I love simple and very easy recipes using chocolate that does not change the originality of the chocolate taste. This is one such recipe that i have baked many times, whenever i thought of indulging in chocolate. Its is egg free, very chocolaty and melt in mouth triple chocolate muffins using healthy flour.

Ingredients
- 1 ¼ cup whole-wheat flour
- ½ cup finger millet flour
- 3 tbsp unsweetened cocoa powder
- ¾ cup brown sugar
- ¾ cup dark chocolate chips
- ¼ cup milk chocolate chips
- 1 ½ tsp baking powder
- ½ tsp baking soda
- A pinch of salt
- 1 cup + 1 tbsp milk
- 1/3 cup oil
- ½ tsp pure vanilla extract

Instructions
- Sieve whole wheat flour, finger millet flour, baking powder, baking soda, cocoa powder and salt atleast for 3 times and set aside in a bowl
- Melt dark chocolate chips with 1 tbsp of milk in microwave. (For 30 sec and increase by 10 or 20 seconds if needed). Mix well.
- Dissolve sugar in 1 cup of milk and add oil, vanilla extract. Mix well.
- To the above wet mixture, add the melted chocolate and combine well. There should not be any chocolate lumps
- Gently fold the flour mixture to the wet mixture. Ensure not to over beat the muffin batter.
- Preheat oven @190c. Fill half of the muffin cups with the batter, top the Muffins with milk chocolate chips and bake it for 30 mins(@ 190c)
Notes
1. Sifting the flour quite a number of times gives proper aeration and improves the texture of the bakes.
2. The measurement quoted in the recipe yields approximately 9 or 10 medium sized muffins.
