Ingredients
- 2 cup Tapioca (peeled, cooked and mashed)
- 1/2 cup Carrot (grated)
- 1/2 cup Coconut (grated)
- 3 Green Chillies (finely chopped)
- 10 Shallots (finely chopped)
- 1 sprig Curry leaves
- 3 Eggs (beaten)
- 1/2 cup Vegetable oil
- 2-3 tbsp Milk
- Salt (to taste)
- 1/2 cup Cheddar cheese (grated)

Instructions
- Cook tapioca well with salt and water. Drain water and mash the tapioca nicely.
- To this, add carrot, shallots, green chilies, coconut and curry leaves.
- Next add in the beaten eggs and oil.
- Add milk as required, checking the consistency.
- Preheat the oven to 180 degree centigrade.
- Grease the muffin cases and pour in the batter.
- Bake for 25 minutes.
- 3 minutes before taking the muffins out of the oven, add in the grated cheddar cheese, and continue baking.
- Allow to cool a bit, and then serve.
