  • Cook tapioca well with salt and water. Drain water and mash the tapioca nicely.
  • To this, add carrot, shallots, green chilies, coconut and curry leaves.
  • Next add in the beaten eggs and oil.
  • Add milk as required, checking the consistency.
  • Preheat the oven to 180 degree centigrade.
  • Grease the muffin cases and pour in the batter.
  • Bake for 25 minutes.
  • 3 minutes before taking the muffins out of the oven, add in the grated cheddar cheese, and continue baking.
  • Allow to cool a bit, and then serve.
