Who doesn't like potato? Well I myself love potatoes a lot and same is my son. In fact there are times when I don't find anything fancy in the pantry i opt cooking some potatoes. The most humble vegetables / root that blends with almost every dish, curry, or any other vegetable. There are around thousands of recipes made using potatoes all across the world, in fact I feel where nothing grows, grow a potato. Whether its fries, chips, any Indian or International curry, a pie, sweet or savory...potatoes are just a perfect savior to all cooks in the kitchen. Hasselback Potatoes - Jamie Oliver style. Though the original recipe has a vibrant use of Rose Mary and Gorgonzola Cheese but as my place doesn't provide me such exotic ingredients I replaced it with our very desi Coriander, some Garlic Powder and Cheddar Cheese.

Instructions
- Wash potatoes nicely to remove all dirt. Wipe them with a kitchen towel and keep aside.
- Collect all the ingredients on the counter before you start with the recipe
- Pre heat the oven for 10-15 mins at 220 degree C.
- Take the potatoes and make cuts across the width of each potato. Make the slices only till 2/3rd way to the flesh, don't cut apart
- Make small pieces of cheese slices and insert between the cuts of the potatoes as many as you can.
- Take a shallow baking tray and brush with butter.
- Place the potatoes on the tray at equal distance and brush the top with Olive Oil.
- Pop some butter cubes on each potato and bake for 3-4 mins or till the butter melts down completely.
- Take out the baking tray carefully and sprinkle lots of coriander and grated cheese all over and again place the tray inside the oven and roast for 30-35 mins.
- You will see the potatoes getting brown and crisp with cuts opening as flairs.
- Take out the tray, drizzle some running honey all over and serve hot.
