Ingredients

- 200 gm Cluster Beans guar phali
- 1 Onion finely chopped, medium
- 2 tbsp Coriander chopped
- 1 sprig Curry Leaves
Spices & Pantry
- 1 tbsp Lentils black, split black lentils
- 1 tbsp Chickpeas split chickpeas
- ½ tsp Cumin Seeds
- ½ tsp Mustard Seeds
- 1 Chili Pepper broken into pieces, dried, red
- ½ tsp Turmeric Powder
- 1 tsp Chili Powder
- Salt to taste
- 2 tbsp Oil
- Water as needed
Instructions
- Boil the cluster beans in a pot of water for about 5 minutes until slightly tender. This helps reduce bitterness and ensures even cooking. Drain the beans and set aside.
- Heat the oil in a pan over medium heat. Add the urad dal and chana dal. Sauté until they turn golden brown and fragrant. This blooming of spices enhances their flavor.
- Add the cumin seeds, mustard seeds, and curry leaves to the pan. Let them splutter and release their aromas. This tempering process infuses the oil with flavor.
- Add the dried red chili and chopped onion. Sauté until the onion softens and becomes translucent.
- Stir in the turmeric powder and chili powder. Sauté for a minute until fragrant, being careful not to burn the spices.
- Add the par-cooked cluster beans and salt to the pan. Mix well to coat the beans with the spices.
- Cover the pan and cook over medium heat for 5-7 minutes, stirring occasionally, until the beans are tender and flavorful.
- Garnish with fresh chopped coriander leaves. Serve hot as a side dish with rice or roti.
