Ingredients
 

Vegetables

  • 300 gm Cluster Beans fresh cluster beans, gawar, also known as guar beans
  • 3 Potatoes large potatoes, peeled and cut into 1-inch cubes
  • 2 Tomatoes large, finely chopped, ripe tomatoes

Spices & Aromatics

Other

  • 1/2 cup Water for the spice paste
  • 1 tbsp Oil vegetable or mustard oil

Instructions
 

Prepare the Spice Paste

  • In a small bowl, combine ginger-garlic paste, turmeric powder, salt, Kashmiri red chili powder, coriander powder, garam masala, and 1/2 cup water. Mix thoroughly until a smooth paste forms.

Sauté the Spices

  • Heat oil in a pressure cooker or a heavy-bottomed pot. Add cumin seeds and let them splutter. Then, add the prepared spice paste and sauté for 2 minutes over low heat, stirring constantly.

Add Tomatoes and Cook

  • Add the chopped tomatoes to the pot. Cook until the tomatoes soften and break down, about 5-7 minutes. Use a spatula to mash the tomatoes slightly.

Add Potatoes and Beans

  • Add the potatoes and cluster beans to the pot. Mix well to combine with the tomato and spice mixture. Add 1/2 cup of water if needed to avoid burning.

Pressure Cook

  • Close the lid of the pressure cooker and cook for 3 whistles. Once the pressure is released naturally, carefully open the lid.

Serve

  • Your Gavar Aloo Sabzi is ready! Garnish as desired and serve hot with roti, naan, or rice.
