Ingredients
Vegetables
- 300 gm Cluster Beans fresh cluster beans, gawar, also known as guar beans
- 3 Potatoes large potatoes, peeled and cut into 1-inch cubes
- 2 Tomatoes large, finely chopped, ripe tomatoes
Spices & Aromatics
- 1 tbsp Ginger-Garlic Paste
- 1/2 tsp Turmeric Powder haldi
- 1.5 tsp Salt adjust to taste
- 1/2 tsp Kashmiri Chili Powder for color and mild heat. adjust to your spice preference., red
- 1 tsp Coriander Powder dhania
- 1/3 tsp Garam Masala
- 1/2 tsp Cumin Seeds jeera
Instructions
Prepare the Spice Paste
- In a small bowl, combine ginger-garlic paste, turmeric powder, salt, Kashmiri red chili powder, coriander powder, garam masala, and 1/2 cup water. Mix thoroughly until a smooth paste forms.
Sauté the Spices
- Heat oil in a pressure cooker or a heavy-bottomed pot. Add cumin seeds and let them splutter. Then, add the prepared spice paste and sauté for 2 minutes over low heat, stirring constantly.
Add Tomatoes and Cook
- Add the chopped tomatoes to the pot. Cook until the tomatoes soften and break down, about 5-7 minutes. Use a spatula to mash the tomatoes slightly.
Add Potatoes and Beans
- Add the potatoes and cluster beans to the pot. Mix well to combine with the tomato and spice mixture. Add 1/2 cup of water if needed to avoid burning.
Pressure Cook
- Close the lid of the pressure cooker and cook for 3 whistles. Once the pressure is released naturally, carefully open the lid.
Serve
- Your Gavar Aloo Sabzi is ready! Garnish as desired and serve hot with roti, naan, or rice.
