  • Rinse the carrots and French beans thoroughly and trim the ends. Finely chop the onions, carrots, green chilies, and French beans.

  • Heat coconut oil in a kadai (wok) or large pan over medium heat. Add mustard seeds and split black gram. Wait until the mustard seeds begin to splutter and the black gram turns golden brown.

Sautéing the Aromatics

  • Add the curry leaves and sauté for a few seconds until fragrant. Then add the chopped onions and green chilies, sautéing until the onions become translucent.

Cooking the Vegetables

  • Add the chopped carrots and a pinch of salt. Sauté for about 5 minutes, until slightly softened. Add the French beans, cumin seeds, and remaining salt. Stir-fry for another 5-7 minutes, until the beans are tender-crisp and the vegetables are cooked through.

Finishing the Dish

  • Stir in the grated coconut and cook for 1-2 minutes, until fragrant and slightly dry.
