- 4 Chilies finely chopped, green

- Wash the spring onions thoroughly and chop both the white and green parts. Separate the white and green sections.
- Heat the oil in a kadhai or large skillet over medium heat. Add the asafoetida and sauté for about 30 seconds until fragrant. This blooms the spice and enhances its flavor.
- Add the chopped garlic and sauté until lightly golden. Be careful not to burn the garlic, as it can become bitter.
- Add the white parts of the spring onions and green chilies to the skillet. Sauté for about a minute until they start to soften and become translucent.

- Reduce the heat to low, add salt to taste, and continue to cook for another 5 minutes, or until the sabzi is tender and most of the moisture has evaporated.
