Instructions

Prepare the Anchovies

  • Clean the anchovies thoroughly and rinse well under cold water. Pat them dry with paper towels.

Marinate the Anchovies

  • In a large bowl, combine the cleaned anchovies, ginger-garlic paste, turmeric powder, salt, red chili powder, lemon juice, egg white, and rice flour. Mix everything until the anchovies are evenly coated.
  • Let the marinated anchovies sit for at least 30 minutes, or longer for a more intense flavor. The longer they marinate, the better they taste!

Deep Fry the Anchovies

  • Heat the vegetable oil in a deep-fryer or heavy-bottomed pan to 350°F (175°C). Test the oil temperature by dropping a small piece of the marinated fish; it should sizzle immediately.
  • Carefully add the marinated anchovies to the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per batch.

Drain and Serve

  • Remove the fried anchovies from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil.
  • Serve the crispy Nethili Meen Fry hot, garnished with thinly sliced red onions, finely chopped green chilies, and a squeeze of fresh lemon juice.

Recipe Notes

Expert Tips for the Perfect Nethili Meen Fry

  • Don't overcrowd the pan: Fry the anchovies in batches to ensure even cooking and crispy results. Overcrowding will lower the oil temperature and result in soggy fish.
  • Adjust spice levels: Feel free to adjust the amount of red chili powder to your preferred spice level.
  • Control the heat: Maintain a medium-low to medium heat while frying to prevent burning and ensure even cooking.
  • Fresh is best: Using fresh anchovies will significantly enhance the flavor of your dish.
