Smoky Paneer Kari Pataka

Ingredients
- For making Smoky Paneer:
- Paneer - 250 gms
- Curd - 2tbsp
- Coriander leaves ginger,garlic and chilli mix paste - 1tbsp
- Mix masala chilli powder, salt and cumin seed powder - 1/2 tbsp or as per taste
- For gravey:
- Big onion-1
- Garlic cloves-4
- Curry patta leaves finely chopped- 1 tbsp
- Cor ringer leaves finely chopped-1 tbsp
- Hang curd-1 cup
- Cooking oil - 1 tbsp
- Coriander powder-1 tbsp
- Salt and chilli powder as per taste
- For smoke:
- Coal- 1 small piece
- Ghee- 1 tbsp
Instructions
- Cut paneer into small cubes. Take a bowl. Pour curd ,Dhaniya paste and mix masala. Add paneer in it.Let it marinate for 30 minutes.
- After that use Air fryer to roast it for 15 min at 180 degree. Now, keep all roasted paneer in a deep bowl. Heat a piece of coal, keep it in centre of paneer. Add 1 tbsp of ghee on coal. Cover bowl and keep it covered for atleast 15 min.
- Take hung curd. Add Dhaniya patti and Kari patta in it. Mix them well.
- Take oil. After a minute add garlic and onion. Sauté it . Off the gas stove and add hung curd mixture.Mix it well. Now add coriander powder, chilli powder and salt as per taste. Now start stove and mix it well.
- Now add smoky paneer in it. Use Kari patta and green chilli for decoration . Serve it hot with chapati, missi roti or naan.
Notes
- One can roast paneer on tawa, tandoor etc.
- Use hang curd for gravy as it gives creamy texture.
My nose (and, off course, my tongue) have started getting the smoky feel 🙂
Love the way you have used coal and I can imagine the Smokey flavor.
