Shahi poori is a deep fried indian bread ,stuffed with cottage cheese and some spices. Shahi poori or stuffed paneer poori is a complete meal for kuds lunch boxes, and picnics.

Ingredients
- 1 รขยฝcups Whole Wheat Flour gehun ka atta, or dough for the dough
- 1/4 tsp Baking Powder
- 1 tbsp fresh curd dahi fresh curds
- 2 Desi Ghee tablspoon melted
- 1-2 tsp Salt or as per taste
- 100 gm Stuffing cottage cheese, or paneer for grated or cubed paneer
- 2 tsp Green Chillies finely chopped
- 2 Onions finely chopped
- 2 tbsp Coriander dhania finely chopped
- 1/2 tsp red chili powder optional
- 1-2 tsp Salt or as per taste
- Oil fir deep frying and rolling
- 1 Kasuri methi tspn

Instructions
- Method:- For the dough Mix the flour ,curd, salt baking soda , knead a stiff dough using enough water. Divide the dough into 24 equal portions (for 12 pooris) and keep aside.
- For Stuffing Heat a small pan with 2 teaspoon of oil in it. Add kasoori methi then onions and salt soute till onions get transparent. Now add remaning stuffing ingredients
- How to preceed Divide the stuffing into 12 equal portions and keep aside. Roll out two portion of the dough into a thin round circles (poori) with the help of a little oil. Put one portion of the stuffing in the centre .
- cover the stuffing with another poori completely. Press the edges or cut it with a steel bowl with sharp edges. (see the picture ) Repeat with the remaining portions.
- Heat the oil in a kadhai and deep-fry the puris, a few at a time, till they turn golden brown in colour from both sides. Drain on absorbent paper.
- Serve immediately.
