    Mango Pickle or Aam ka achaar is a most sought after pickle. Tastes best with paranthas or simple everyday meal.

    Ingredients
      

    • Raw Mango 1 Kg Washed, wiped and cut into cubes
    • Salt to taste
    • Red Chili Powder 4 tbsp
    • Turmeric Powder 4 tbsp
    • Fenugreek Seeds 5 tbsp
    • Coriander Seeds 1 tbsp
    • Mustard Seeds ¼ Cup
    • Cumin Seeds 3 tsp
    • Fennel Seeds ¼ Cup
    • Kalonji ½ tbsp
    • Mustard Oil 4 Cup Boiled and cooled down
    • Asafoetida to taste

    Instructions
     

    • Take a big size bowl. Add raw mango cubes, turmeric powder and salt. Mix well, cover it and keep it aside for 2-3 hours
    • Grind fenugreek seeds, coriander seeds, mustards seeds, cumin seeds, fennel seeds, kalonji into coarse powder.
    • Drain out the excess water from raw mango cubes and add asafoetida, salt (if required), red chili powder.
    • Mix 2 Cup of oil with the grounded powder. Now mix it with the raw mango cubes
    • Cover it and keep it into the sunlight for 3 days. On the 4th day, add the remaining oil. Mix well and cover it and keep it into the sunlight for 8-10 days. After that you can use it as a pickle.
