Ingredients
- Raw Mango 1 Kg Washed, wiped and cut into cubes
- Salt to taste
- Red Chili Powder 4 tbsp
- Turmeric Powder 4 tbsp
- Fenugreek Seeds 5 tbsp
- Coriander Seeds 1 tbsp
- Mustard Seeds ¼ Cup
- Cumin Seeds 3 tsp
- Fennel Seeds ¼ Cup
- Kalonji ½ tbsp
- Mustard Oil 4 Cup Boiled and cooled down
- Asafoetida to taste

Instructions
- Take a big size bowl. Add raw mango cubes, turmeric powder and salt. Mix well, cover it and keep it aside for 2-3 hours
- Grind fenugreek seeds, coriander seeds, mustards seeds, cumin seeds, fennel seeds, kalonji into coarse powder.
- Drain out the excess water from raw mango cubes and add asafoetida, salt (if required), red chili powder.
- Mix 2 Cup of oil with the grounded powder. Now mix it with the raw mango cubes
- Cover it and keep it into the sunlight for 3 days. On the 4th day, add the remaining oil. Mix well and cover it and keep it into the sunlight for 8-10 days. After that you can use it as a pickle.
