AACHAR/PICKLE is always found in a foodie's plate. As summer has arrived, aachar season started, tongue tingling aachar was my father- in- law's weakness. So i experimented & made a new aachar.

Ingredients
- 2 Rajapuri raw mangoes
- 500 gms garlic cloves
- 250 gms tender ginger
- 250 gms broken mustard seeds
- 150 gms broken fenugreek seeds
- 100 gms salt
- 1 teaspoon Turmeric Powder
- 1/4 teaspoon asafoetida
- 1 teaspoon black salt sanchar
- 1 teaspoon citric acid
- 4 tbsp oil
- 6 tbsp red chilli powder

Instructions
- Wash & peel mangoes.
- Crush garlic & ginger separately, crush coarse not in paste form.
- Now heat oil & saute garlic on slow flame. Then let it cool properly.
- Mix well all rest of dry ingredients & add two tbsp oil.
- Add garlic, grated mango & ginger in it.
- Adjust salt & red chilli powder to your taste.
- Store in refrigerator.
Notes
- You can add more oil if you wish.
