Recipe Notes

Additional Tips

  • Pat the okra completely dry after washing and before slicing to prevent sliminess during frying; excess moisture can make the dish soggy.
  • For extra crispiness, toss the sliced okra in a teaspoon of rice flour or chickpea flour (besan) before frying—this helps form a crunchy coating that absorbs the masalas well.
  • If you prefer a tangier flavor, substitute dry mango powder (amchur) with a squeeze of fresh lemon juice added at the end of cooking, but avoid adding it while frying to prevent moisture buildup.
  • Leftover okra fry can be used as a stuffing for wraps or parathas the next day—just reheat gently on a pan to maintain its texture.
