The recipe is Vendakkai poriyal an everyday South Indian Dish.In Tamil,Vendakkai means Okra or lady finger and poriyal means fried.This is simple South Indian recipe where the okra is roasted with onions on low flame until its fully cooked.

Ingredients
- 200 gm Ladies Finger
- 2 tbsp Oil
- 1 tsp Urad Dal
- 1 tsp Mustard Seeds
- 8 leaves Curry
- 1 Onion chopped big size
- 1-2 tsp Salt or as per taste
- 1 tsp Turmeric Powder
- 1 tsp Sambar Powder

Instructions
- Wash and clean the okra .Cut of the corners and chop into small pieces.Keep aside.
- Heat oil in a pan.
- Add urad dal,mustard seeds and curry leaves to hot oil.
- When dal turns slightly brown and mustard seeds splutter. Add chopped onion and saute on medium flame .
- Cook onions until they turns translucent in color,it will take 2-3 minutes.
- Add chopped okra,salt turmeric and sambar powder . Mix okra well with all the spices.
- Reduce the flame to low and saute once in while every 3-4 minutes.
- Sauteing in low flame will avoid the mixture from sticking on the bottom of pan.
- Cook okra for 15-20 minutes or until completely cooked and dry
- Remove from heat.Serve hot with rice.
Recipe Notes
- This recipe can be prepared without using onions.
- Make sure that you pat dry okra before use else it will turn out to be sticky.
