About Firitatta The Spanish Omlette
Fritatta is a Spanish thick omelet, packed with flavours and could be consumed at any temperature. The Spanish classic Fritatta contains only three ingredients, Eggs, Potatoes and onion. However, many variations have come up along with its three key ingredients. I have added Bell peppers, Cheese, olives alongwith few spices and herbs and have also added bread slices and lots and lots of cheese to make it a full meal. It could be named pizza omelette too. It could be cooked in flat based pan on gas top or after half cook could be put in oven to make it crispier. I cooked it in flat pan in gas stove.

Ingredients
- 4 Eggs â
- 3 Potatoes thinly sliced shredded
- 1 large Onion sliced â
- 1/4th cup Bell Peppers shredded
- 1 Ginger optional minced tspn
- 1 Garlic optional minced tspn
- 2 slice Bread halfed or quartered
- 1 Black Pepper crushed tspn
- 1 Chilli flakes optional tspn
- 1 leaves Coriander or cilantro, or parsley cilantro parsley
- 3 tbsp Olive Oil sliced
- 2 tbsp Butter
- 1/2 cup Parmesan Cheese or mozzarella mozzarella grated
- 1-2 tsp Salt or as per taste

Instructions
- Ingredients image. Beat the eggs in a bowl with little salt and ginger. Keep aside.
- Heat oil in pan. Put the potatoes and cook in medium flame till tender but not browned. Add onion and cook together till potatoes are softened and onions are translucent.
- Add this mix in the beaten egg bowl and mix well.
- In the same pan add butter. Pour the egg mix in the pan. Use spatula and gently spread the potato and onion mix evenly in the pan. Cook in medium flame.
- Arrange the bread pieces over the over the mix when the surface is wet.
- Add the grated cheese all over the omelet. Spread the bell peppers, chili flakes, black pepper one by one. Slowly you will see the breads get soaked in the wet egg mix.
- Cook in low fame till the top is cooked but not browned.
- Cook it covered for 2-3 mins. The cheese will melt.
- Flip it by inverting in on a plate.
- Slide it back into the pan to cook it evenly on both sides. While cooking shake the pan gently at times.
- Another method is to Place the pan in the oven after adding vegetables and cheese and let it get browned in the oven.
- Serve hot with your favourite sauce. I love it with Green Chutney.
- Note: Top it with your choice ingredients. Sauteed Mushrooms Hamm Salami Minced meat(pre cooked)
