Recipe Notes
Additional Tips
- For an even creamier interior, allow the cooked potatoes and onions to cool slightly before mixing them with the beaten eggs—this helps prevent the eggs from scrambling when combined and results in a silkier texture.
- To achieve the classic rounded shape and golden crust, use a small nonstick skillet and invert the omelette onto a plate halfway through cooking, then gently slide it back into the pan to finish on the other side.
- If you're looking to add a spicy twist, finely chop a small fresh chili or add a pinch of smoked paprika to the egg mixture for subtle heat and a hint of smokiness.
- The Spanish omelette is just as delicious served cold; store leftovers in the fridge for up to two days and enjoy them sliced as a tapa or packed in a lunchbox for a flavorful snack.
