Ingredients
- Rice – short and thick -200 gms
- Vegetable stock -2 ltrs
- Olive oil
- Butter salted -50 gms
- Bell peppers – red green and yellow - 2 each
- Tomatoes chopped - 2 kgs
- Onion – red- chopped -1 kg
- Sweet basil -20 nos
- Garlic - 25 gms

Instructions
- Heat oil in a pan (I use jalebi Kadhai) and add onion, garlic and sauté for a 5 minutes before you add the tomatoes and slow cook for 30 minutes.
- In another pan add oil and sauté the dry rice and ladle in the prepared gravy. Slowly and gently cook the rice (can take 25 to 35 minutes on medium slow flame).
- Then add the half cooked quartered peppers and some more basil . Serve with garlic mayonnaise and lots of lemons
Notes
- Use Bomba rice from Spain- its equivalent is Kerela Rice.
