Ingredients
- Larg eggs 3
- Tomatoes red and soft deseeded and chopped 1
- Potato large 1
- Spring onion finely chopped 1/4 cup
- Black pepper powder 1/4 teaspoon
- Salt a big pinch or as required
- Chaat masala 1/4 teaspoon
- Red chilli flakes 1/4 teaspoon
- Grated cheddar cheese 2 tablespoons
- Grated mozzarella cheese 2 tablespoons
- Cilantros finely chopped
- Red capsicum julienned
- Olive oil 1 tablespoon

Instructions
- Firstly , cut the potato into thin square slices like chips . Sprinkle little salt and chaat powder . Give a gentle quick toss .
- Heat a pan . Add 1 tablespoon olive oil . Add the potato pieces and fry in low heat till they turn golden .
- In a bowl , beat and pour 3 eggs . Add the cut veggies , chopped spring onions , cilantros .Reserve few spring onions for garnishing .
- Add in the red chilli flakes , black pepper powder , salt . Whisk the mixture to a frothy consistency .
- Meantime , the potatoes are crispy and done . Simmer the flame . Pour the egg veggies mixture on top of crispy potatoes .
- Sprinkle grated cheddar cheese . Cover the pan and cook in low heat for 5 minutes .
- The Omlette would rise and look like a cake . Finally sprinkle mozarella cheese and few chopped spring onions . Cover and cook for another 2 minutes in low heat .
- Potato Cheesy Omlette is ready to serve . Serve hot .
Notes
Covering the pan while cooking the eggs is mandatory .
