Recipe Notes
Additional Tips
- For extra smoky flavor, try the dhungar method: briefly place a small piece of hot charcoal in a bowl inside the finished curry, drizzle with ghee, cover tightly for 5 minutes, then remove—the resulting aroma will mimic the taste of authentic tandoor-cooked chicken.
- If you prefer a richer, silkier sauce, blend the tomato-onion mixture until completely smooth before adding the chicken tikka; this creates the velvety texture found in high-end restaurants.
- To make this dish dairy-free, substitute coconut cream or cashew cream for the butter and cream, and brush the chicken tikka with a little oil instead of butter during grilling.
- Garnish with a drizzle of fresh cream, chopped cilantro, and a sprinkle of crushed kasuri methi (dried fenugreek leaves) just before serving for a burst of aroma and authentic North Indian flair.
