Recipe Notes
Additional Tips
- Thread alternate pieces of onion and capsicum between the chicken on skewers to add bursts of sweetness and crunch, which balance the heat of the Schezwan sauce.
- For a smokier flavor, after grilling, briefly place the cooked kebabs over a charcoal piece in a covered dish to infuse a classic tandoori aroma (dhungar technique).
- If you prefer extra-juicy kebabs, marinate the chicken overnight in the hung curd and Schezwan mixture; the extra time allows the yogurt to tenderize the meat more thoroughly.
- For a vegetarian variation, substitute paneer or firm tofu for chicken, and reduce the grilling time to avoid overcooking.
