  • 1 beetroot - medium sized
  • 1/3 cup coconut flour - or oats flour
  • 10 dates - deseeded
  • 3 tsp chia seeds
  • Coconut - desiccated, for rolling

  • Peel and grate the beetroot. Squeeze out the excess liquid.
  • Take the grated beetroot, oats flour, chia seeds and deserved dates in a blender jar. Buzz for 10-15 seconds to get everything together into a solid mass.
  • Refrigate for 10-15 minutes.
  • Remove from fridge, divide into 9 portions and roll each portion into a ball.
  • Place the dedicated coconut in a plate. Carefully roll each ball over it to coat uniformly.
  • Refrigerate for another 30 mins.
  • It is now ready to eat. Keep refrigerated and eat when those hunger pangs strike.

  • Add 2-3 drops vanilla essence or cacao powder if you do not like the smell of beets.
