The all American Chili is a classic recipe that works perfectly when you have many mouths to feed and not enough hands to get things done. Great for outdoors or even informal gatherings at home, this is basically a stew that combines chili peppers, meat (beef being the primary choice), tomatoes and beans. There are quite a variations to this dish though and here I have prepared a Vegan version. Serve it with chips, nachos, tortillas or even with rice/paste to make it a complete meal.

Ingredients
- 1 medium sized onion
- 1 red pepper
- 1 stick of celery
- 1 cup cooked red beans
- 2 small tomatoes
- 5-6 garlic cloves
- 1 jalapeno
- Fresh oregano
- 1 tsp cumin powder
- 1/2 tsp chili powder
- 2 tsp red wine vinegar
- 1 tbsp tomato sauce
- 2 tsp olive oil
- Salt
- 2-3 cup of vegetable stock

Instructions
- Finely chop all the vegetables.
- Heat the olive oil in a wok.
- Add the finely chopped onions, celery, garlic and jalapeno.
- Once the onions starts looking translucent, add the cumin powder and chili powder.
- After 2 minutes, add the chopped tomato and the tomato sauce.
- Once the tomatoes turn mushy, add the cooked beans along with the chopped peppers and the vinegar.
- Add the vegetable stock and let it simmer on low flame for 30 mins.
- Transfer a small portion of the chili into a grinder jar. Blend with a little stock to a coarse consistency.
- Transfer it back to the wok and let it simmer for another 8-10 mins.
- Remove from the flame.
- Serve it warm.
Notes
Usually Chili is simmered on a low flame for 2-3 hours to get the smooth rich texture to it. Blending a portion of the Chili helps achieve the same in less cooking time.
