Nasi Ulam
Although not a fried rice per se, this dish is a tasty combination of cold rice and various fresh herbs such as betel leaves, cashew leaves or Indian pennyroyal. Dried shrimp, grated coconut, shallots, various spices and sometimes shredded dried fish are also added.
This food is originally consumed by the Peranakan ethnic minority in Malaysia, although nowadays its consumption has spread throughout the country, as well as in some parts of Thailand and Indonesia.

Nasi goreng kambing is a traditional variety of Indonesian nasi goreng (fried rice). It is a dish originating in Malaysia, although it is also eaten in Singapore and Indonesia.
The dish consists of rice combined with a mixture of carrots, shallots, cucumbers, ginger, garlic, chilies, oil, curry leaves, lime leaves, shrimp paste, coriander, cinnamon, white vinegar and fish sauce, all stir-fried, and then garnished with sliced tomatoes and a fried egg.
Khao khluk kapi
This is a Thai rice dish made from cooked rice that is fried with shrimp paste, and then topped or served along with a number of ingredients, such as crispy dried shrimp, sliced sweet pork or chicken, chilies, raw mango shreds, red onions, tortilla chips, cucumbers, green onions and cilantro.
This dish is characterized by its coloring, thanks to its ingredients and also, they create one of the best mixtures of flavors and textures in the mouth that exist. Khao khluk kapi is usually sold in many street stalls throughout Thailand.

Shrimp fried rice
Ingredients
- 1 pound of large shrimp.
- 2 cups of white rice.
- 1 tbsp. of tomato sauce.
- 1 carrot, chopped into squares
- ½ cup peas
- 1 finely chopped bell pepper.
- ½ chopped pearl onion.
- 2 crushed garlic cloves.
- 1 chopped sprig of cilantro.
- 1 chopped sprig of parsley.
- Oil.
- 1 ½ tablespoon of achiote oil.
- Salt and pepper.
Preparation
- In a pot put 5 cups of water, add the rice, carrots, peas, salt to taste and let cook over high heat, when the rice bursts add a splash of oil, lower the heat, cover and let cook for about 10 minutes more.
- Peel the shrimp without forgetting to remove the brown vein from the back. Wash the shells and cook them with a little water just enough to cover them and reserve the liquid.
- In a frying pan heat the achiote oil, add the pearl onion, the crushed garlic and the bell pepper and sauté for about 5 minutes preparing a frying sauce.
- Add the shrimp, cilantro, parsley, salt and pepper to taste, tomato sauce and a little of the broth from the shells and let it cook for 5 minutes.
- As a last step, we add the refried sauce with the shrimp to the rice and mix very well. And voila! We have our delicious dish ready to be served.
