Brown Rice Shrimp Jambalaya (Valentines Day Dinner)

Jambalaya is dish of Louisiana, New orleans,origin of Spanish and French influence. It consists of meat , vegetable , seafood mixed with rice. This one pot meal can be good dish for valentine dinner. Easy to make , less time and a delicious dinner for your Valentine.

Ingredients
  

  • 1 tbsp olive oil
  • 2 cup finely chopped yellow onion
  • 3/4 cup chopped bell peppers red, green, yellow
  • 4 garlic cloves minced
  • 2 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper powder
  • 1 tsp red cayenne pepper
  • 1 1/2 cup diced campari tomatoes
  • 4 cup Chicken broth
  • 1 1/2 cup long grain brown rice
  • 1 1/2 cup long grain brown rice
  • 4 scallions for garnishing
  • Salt for seasoning

Instructions
 

  • In a big pan or wok heat olive oil. Add chopped onions until translucent. Add minced garlic, cook a little bit then add chopped bell peppers until tender.
  • Add diced campari tomatoes, cayenne pepper,black pepper powder,salt,thyme and parsley. cook about 4 to 5 minutes.
  • Mix the brown rice and fry a little bit then add chicken stock in it. Bring to a boil then simmer the flame and cover cook for about 45 - 50 minutes until rice is tender and most of the liquid has been absorbed.
  • Mix the shrimp and cover cook until the shrimp are cooked.
  • Place the jambalaya into serving dish and garnish with sliced scallions.

Notes

Soak rice for 30 minutes.
