Ingredients
  

  • Green papaya – ½
  • Carrot optional - 2
  • Chopped tomatoes- 1 medium
  • Chopped and blanched long beans optional - 5 to 6
  • Garlic- 4 to 6 cloves
  • Lemon juice – 3 tablespoon
  • Light soy sauce- 3 tablespoon
  • Vinegar- 2 tablespoon
  • Roasted peanuts- 2 tablespoon
  • Red or green chilies to taste
  • Jaggery or honey to taste

Instructions
 

  • Finely shred the papaya and carrot. Soak them in ice cold water for 10 to 15 minutes. You can also thickly grate the both.
  • Lightly pound the garlic and chilies in a mortar pestle.
  • Add jaggery, lemon juice and soy sauce, pound to make a paste.
  • Add roasted peanuts and lightly pound all the ingredients.
  • Stir the ingredients with a spoon to prevent the paste from thickening.
  • Add the tomato and long beans and slightly crush them.
  • Add the shredded papaya and carrot, lightly pound and mix all the ingredients until all blended together.
  • Serve raw papaya salad garnished with crushed peanuts.
