Purple cabbage, which is more commonly known as red cabbage,apart from its gorgeous looks have ample nutritional benefits.It is an ideal choice for dieters. When the cabbage is cooked for long it loses many of its antioxidants and vitamins ,so it is best consumed in raw or half cooked state.The scientists say that it gives the best benefits when eaten in a mixture of salad and cooked form.The antioxidants in the purple cabbage are easier to be absorbed by the body from a cooked state.Besides this the purple cabbage contains notable amounts of carbohydrates and dietary fiber in comparison to its few calories.

Ingredients
  

  • Whole wheat flour or refined flour 2 cups
  • Oil 1/3rd cup[for dough]
  • Salt
  • Chopped onions 1/4 th cup
  • chopped garlic 1/2 cup
  • Red chilly flakes 2 tbsp
  • Shredded purple cabbage 2 cups
  • Cheese grated 1/2 cup[optional]
  • Oil or butter or ghee 3 to 4 tbsp[for frying]

Instructions
 

  • Mix Flour with water ,salt and oil to form a tight dough. Make small balls from the dough.
  • Add 1 tbsp of oil in the wok and saute garlic . Add some chilly flakes followed by chopped onions Add the shredded cabbage. Add salt to taste and finish with grated cheese.
  • Roll the ball of flour into a flat circle. Keep about 2 tbsp of filling at the center and close the dough to form a small ball. Flatten the ball with your palm and allow it to rest for 5 minutes(This is very important)
  • Roll the ball into a round flat bread. Heat the pan and place the bread or paratha on the pan. When the paratha is cooked on one side,flip the paratha.
  • When both the sides are semi cooked ,add 1 tbsp of oil and fry both the sides for few seconds on high flame. Serve with fresh salad of purple cabbage marinated with lemon juice and fresh curd .

Notes

Allow the  stuffed ball of dough to rest for at least 5 minutes before flattening it with rolling pin
