This recipe I had been trying to prepare since long with various options, finally I was able to find the right combination with Zucchini. This pancake is having taste and nutritious fibres of zucchini and an excellent option to enjoy your morning / evening tea

Ingredients
- 1 Zucchini grated
- 1 Boiled potato grated
- 1 Onion finely chopped
- 2 tablespoon curd
- 1 tablespoon sooji semolina
- 1 tablespoon all purpose floor
- 1 Teaspoon chilly flakes
- 2 Green chilly chopped
- 1 tablespoon chopped coriander
- Salt
- 2 tablespoon Oil

Instructions
- Take a Zucchini wash and grate it, sprinkle some salt on it and keep aside for 10 minutes.
- Peal potato and grate it.
- Squeeze extra water from Zucchini
- In a bowl take grated Zucchini, potato, chopped onion, green chilly, chopped coriander, chilly flakes and salt and mix it
- Now add sooji, all purpose floor and curd to the mixture and mix all together nicely you will get a sticky dough
- Take a small portion of mixture in your palm and spread it
- In a non stick pan take 1 tablespoon of oil and cook Zucchini Potato Pancake from both the sides as shown in picture
- Serve it hot with a cup of tea or coffee ....
